JOB SUMMARY
Responsible for managing all aspects of food production, related to in house and off site catering events. Controls of HACCP program in his division. Achieve Goals of ESS. Gallup Scores . Oversees all banquet culinary areas. Responsible to be Proactive, and to demonstrate business ethics and personal integrity. Shares learning,innovations and best practices with others. Train and monitor the performance of the staff. Follow to achieve Guest satisfaction. Create new proposals.
MAIN DUTIES AND RESPONSABILITIES.
Prepare monthly labor schedule for banquet kitchen, including interns, and adjust this to business demand.
Ensures accuracy of all Banquet Events Orders in a timely manner.
Ensures that the kitchen provides nutritious, safe, appealing and properly flavored food.
Implements quality standards in cooking methods, presentation techniques, portion control and retention of nutrients.
Ensure a safe and sanitary work environment for all employees.
Standardize production recipes and pictures to ensure consistent quality
Creates and develop recipes and plans and price menu items.
Minimize waste and maintain control to attain forecasted food cost.
Monitors al mise en place to ensure it is completed to standards.
Meet with Executive Sous Chef to review schedules, anticipated business changes in BEO’s and revised together daily events.
Daily Food ordering for Banquet Kitchen Area.
Give Training to new staff and trainees.
Monthly HACCP standards of Banquet kitchen.
Provide to all the cooks with the proper information for the daily basis.
Research local products, new suppliers, and special markets.
Complete work orders for maintenance and repairs.
Meets with the Sales team to stay current with customer needs and complete the sales process.
Attends Gourmet shows, food and wine meetings.
All functions required for the proper performance of the Job Position.
