Job Description: o Safely and efficiently trim beef to specification, using a knife or by operating equipment o Achieve throughputs, maximize yields, minimize waste, and ensure quality standards are maintained o Maintain an in-depth knowledge of product specifications o Remove contamination/defects from product o When trimming product, aim to maximize yield and minimize waste o Use judgement to determine the best use of product (so as not to de-value it) o Maintain a sharp and sterile knife o Manually handle product and product in trays
