• Management of the Potager restaurant team.
• Develop business and promote to local community and hotel guests
• Supervision and Development of the team
• Ensuring that the team has a good knowledge of products in order to maximise sales
• Produce and implement performance standards
• Ensuring that high standard of staff presentation and that customer care procedures are carried out to a high level
• Liaising with Head Chef daily regarding menu and new dishes
• Implementing high standard practice and policies of business
• To ensure the implementation and maintenance of legislation and procedures in a consistent manner
• Allocation of tasks to waiting staff
• Ensuring high standards of spot check of tables, bar and lounge areas
• Responsible for management of bookings
• Staff training
• Supervision of all facilities
• General administration to include timesheets
• Organisation of staff monthly meeting
